While these popsicles look like something from the ice-cream truck, they are actually a cool and surprising take on seasonal cocktails. Inspired by popular drinks like a fruity margarita or an after-dinner amaretto, these make-ahead treats allow you to offer guests a drink and dessert in one.
Watermelon-Raspberry Margarita Popsicles
Makes 6 popsicles
Ingredients:
- 5 cups watermelon, cubed
- 1 1/2 cups raspberries
- 2 tablespoons sugar
- 4 tablespoons best-quality blanco tequila, such as Herradura or Don Julio
- juice of 1 lime
1. Puree watermelon in a food processor or blender until smooth. Pour through a fine mesh strainer set over a pitcher or bowl with a pour spout; discard solids. You should have about 2 cups of watermelon juice.
2. Puree raspberries and add to the watermelon juice.
3. Stir sugar, tequila, and lime juice into raspberry-watermelon mixture. Pour into popsicle molds and freeze until set, about 4 hours.
Cucumber Riesling Popsicles
Makes 6 popsicles
Note: English cucumbers are also called hothouse cucumbers and are often sold individually wrapped in plastic.
Ingredients:
- 1 large English cucumber, roughly chopped
- 1 1/2 cups white grape juice
- 1/2 cup Riesling wine
- 4 tablespoons sugar
1. Puree cucumber and white grape juice in a food processor or blender until cucumber is completely broken down. Transfer to a pitcher or bowl with a pour spout.
2. Stir Riesling and sugar into cucumber-grape juice mixture. Pour into popsicle molds and freeze until set, about 4 hours.
Grape Almond Amaretto Popsicles
Makes 6 popsicles
Ingredients:
- 1 cup Concord grape juice
- 4 tablespoons sugar
- 1 cup almond milk
- 4 tablespoons amaretto
1. Combine grape juice and 2 tablespoons of sugar in a liquid measuring cup. Divide mixture evenly among popsicle molds and freeze (without the molds’ tops) until set, about 4 hours.
2. Combine almond milk, remaining 2 tablespoons sugar, and amaretto in a liquid measuring cup. Pour almond milk mixture over frozen grape juice, dividing evenly among popsicle molds. Snap on tops. Freeze until set, about 4 hours.
Rosemary Lemon Drop Popsicles
Makes 6 popsicles
Ingredients:
- 1/2 cup freshly squeezed lemon juice
- 2 tablespoons limoncello
- 2 tablespoons best-quality vodka
- 1 cup rosemary simple syrup (see recipe below)
1. Combine 1 cup water, lemon juice, limoncello, and vodka in a pitcher or bowl with a pour spout.
2. Stir in rosemary simple syrup until thoroughly combined. Pour mixture into popsicle molds and freeze until set, about 4 hours.
Rosemary Simple Syrup
Makes 1 cup
Ingredients:
- 1/2 cup sugar
- 4-5 rosemary sprigs
1. Combine 1/2 cup water, sugar, and rosemary sprigs in a small saucepan. Bring to a boil, stirring constantly, just until all the sugar has dissolved. Immediately remove from heat and let steep at room temperature until cool. Once cooled, remove rosemary sprigs.
