Nothing beats the heat quite like a refreshing summer cocktail, and this planter’s punch uses the ripe peaches of summer in the most delicious way. They’re sliced and infused into the rum overnight, then crushed in a cocktail shaker along with vibrant citrus juices, honey, and grenadine. The result is one of the most thirst-quenching cocktails you’ll come across, with the most lovely hue to go along with it.
Peach Planter’s Punch
Serves 4
Ingredients:
2 whole peaches
8 ounces golden spiced rum
1 cup cubed ice
10 ounces fresh-squeezed orange juice
6 ounces fresh-squeezed lime juice
2 ounces honey
1 ounce grenadine
Directions:
Pit one of the peaches and cut it into eighths. Place the slices and the rum in a large mason jar. Cover and refrigerate overnight.
The next day, pit the remaining peach and cut it into sixteenths. Place a couple of peach slices in each of the four serving glasses, and place the remaining slices in a cocktail shaker. Add a couple of ice cubes to each glass (about 1/2 cup total), then set aside.
Place the remaining 1/2 cup ice in the cocktail shaker along with 5 ounces orange juice, 3 ounces lime juice, 1 ounce honey, and 1/2 ounce (1 tablespoon) grenadine. Cover and shake vigorously for 30 seconds, then strain and empty the mixture into two serving glasses. Add the remaining 5 ounces orange juice, 3 ounces lime juice, 1 ounce honey, and 1/2 ounce grenadine to the cocktail shaker and repeat, straining the shaken punch into the remaining 2 glasses. Serve immediately.
